What it does

Potassium sorbate is the potassium salt of sorbic acid, originally derived from the berries of the mountain ash tree. It is a broad-spectrum preservative effective against yeasts and moulds. It is popular in "natural" and "clean beauty" formulations as a paraben and phenoxyethanol alternative, often paired with sodium benzoate.
